A Spirited History: Jim Beam bourbon
In the 1770s, the United States government offered incentives to farmers who would move west to the wild frontier of Kentucky and grow corn. Pennsylvanian Jacob Beam jumped at the opportunity. By the early 1800s, more than 2,000 distillers operated in the Bluegrass State; David Beam, Jacob’s son and the second Beam family distiller, began to use the “sour mash” process, which uses some leftover mix from the previous batch as the starting point for the next one. This process is still used by Jim Beam to this day to ensure consistency.

Kentucky bourbon was born in 1830, when distillers began burning the barrels they used for whiskey storage. Beforehand, whiskey was stored and shipped in fish or vinegar barrels, which affected the taste mightily. The new charred oak barrels eliminated the smell and gave the whiskey a unique flavor.

Prohibition killed the livelihoods of many distillers, but James Beauregard Beam jumped right back into the family business upon Prohibition’s repeal in 1933 at the age of 69. The bourbon was immediately rebranded in his name. And the rest is history.
